New Killarney business aims to fill the gaps in hospitality sector

In 2022, two Kerry hospitality professionals began to talk about the future. Cliodhna Foley from Killorglin had run her own restaurant for 15 years, originally called Sol y Sombra, now 10 Bridge Street. She was worn out trying to keep chefs and pay for them all year round. 

Craig Lynch, then a top chef at the Ballygarry in Tralee (and winner of the RAI Munster Chef of the Year in 2022) also saw first hand that something would need to change for hospitality kitchens.  

They started to talk about opening a Production Kitchen specifically to serve the food trade in Kerry. Basically, an off-site kitchen, designed to produce in volume with the cooking done by a small team of really good chefs.

They set up Kerry Food Market and commissioned a production kitchen at the Kerry Food Hub in Firies. Dylan Kelly, another experienced chef joined the team in April, having worked at the Europe for many years and been a partner in The Rustic Pantry.  

During the summer of 2023 the kitchen got up and running, preparing much of the food served at 10 Bridge Street, both for the restaurant and weddings, as well as doing a range of high quality prepared meals for outlets on the Ring of Kerry.

Fast forward to October 2023, and the business is now ready to open its doors to other hospitality businesses. It offers a range of standard products and will also undertake cooking to a businesses’ own specification if the volume warrants it.

Cliodhna says that “We know that we will have to work hard to establish ourselves and build up trust with the trade, but from my own experience in the last year, using a production kitchen to take some of the strain has been a game changer for me”. 

Craig says that “using the right equipment and well-designed processes, a small but really good team of chefs can deliver quality in high volumes. We are looking forward to working with businesses to bring them the same benefits we have already delivered to 10 Bridge Street.”

St Brendan’s College travel to London

5th year students from St Brendan’s College went to London on their English school trip.

They enjoyed a production of ‘The Book of Mormon’ at the Prince of Wales theatre.

The following morning was spent touring Tate Modern before attending a tour and a brilliant interactive workshop in Shakespeare’s Globe Theatre focusing on their Leaving Certificate single text “Othello”.

The focus of the workshop centred on the performative elements of the play in relation to themes and character development. 

All students performed with great theatrical verve. 

A brilliant experience for all before attending an acclaimed production of the play in the Theatre Royal.

Killarney Musical Society is preparing to stage ‘All Shook Up’ this February to mark its 40th anniversary. As the countdown to the production begins, the society is introducing its lead cast members, including local performer Caoimhe Murray.

Caoimhe takes on the role of Lorraine, a fun-loving and spirited character who falls in love with the mayor’s son, Dean Hyde.
The production is a significant family milestone for Caoimhe, who has been a member of the society for nine years.
She is the daughter of Amanda Murray and the granddaughter of Phil Spillane, both of whom are also long-standing members and part of this year’s cast.
This production marks Caoimhe’s fifth show with the society. Her previous experience includes playing Brigitta Von Trapp in ‘The Sound of Music’ in 2018, as well as lead roles such as Dorothy in ‘The Wizard of Oz’ and Cosette in ‘Les Miserables’ with her stage school. She also recently played Sophie in her school production of ‘Mamma Mia’.
Caoimhe has built an extensive background in performing arts through years of training.
She has been a student of Fiona Crowley’s Stage School since the age of five and has attended the West End House School of Arts for acting.
Her musical training includes singing lessons with Sorcha O’Connor and piano with Catriona Cahillane, alongside completing the AIMS Youth Summer School Programme last year.
‘All Shook Up’ will run at the Gleneagle Arena on February 10, 11, and 12. The show features the music of Elvis Presley and tickets are currently available through the Gleneagle Box Office or via Ticketmaster.
